Some netizens argue that air pollution from grilling is far less than industrial pollution or vehicle emissions, so why should there be such a big campaign against outdoor barbecues? This issue requires specific analysis," explained Dr. Peng Yue, associate research fellow at Tsinghua University's Environmental College to China News Service. Industrial emissions are large but generally far from residential areas; while grilling emissions may not be as large as industrial ones but are within residential zones so they affect residents and surrounding environments.
"Grilled meat releases certain amounts of volatile organic compounds which are important precursors for PM2.5 and ozone," said Dr. Peng Yu explaining how grilled foods pollute with particulate matter released during coal or wood combustion causing nitrogen oxides which react with VOCs in cooking process generating more VOCs attached onto particulate matter surfaces forming haze precursors.
According to IPE Center Director Ma Jun speaking with China News Service, pollutants emitted from grills belong to low-altitude emissions particularly in densely populated urban centers where living density is high affecting many people further exacerbated due lack air circulation during nighttime events like night markets smoke doesn't disperse easily causing greater impact.
